Access to responsibly priced, flexible processing, is a often a major hurdle to the growth of small farms. Farmers are often forced to drive long distances to get their meat processed. Eagle Bridge Custom Meats plays a much-needed role in the development of Washington County's local food economy.
Steve, of Eagle Bridge Custom Meats, didn't grow up dreaming of owning a butcher shop. His father ran a second generation Machine Shop and Steve worked for his dad producing powder coating for the subway cars of NYC. When his father retired and sold the business Steve decided to open a butcher shop. With the help of his friend Ed, an experienced butcher, in 2005, they designed and launched Eagle Bridge Custom Meats.
Today the business has grown to include several employees and Steve runs the business with his sister Debbie. In September of 2009, they with be expending their current facility to include a slaughter house making them a one stop shop for local farmers looking to process their meat.
We'll get a chance to tour their facility, discuss the impacts of humane slaughter, and see some first rate butchering techniques.
